During our recent strike action to protect our pension scheme (UoDSS), one of the things which kept members going on the picket line was a constant supply of cake.
Unfortunately we can report that publishers have turned down all drafts of a recipe book. However, we have gathered together most of the recipes which can still be found!
Apple Cake:
The baker notes: This is probably delicious warm – but technology hasn’t yet worked out getting it warm to a picket line.
Carrot Cake:
The baker notes: I would be tempted to double the mix recipe as I found the cake itself a little thin. A good one for dairy free requirements too. If you can’t find a grown up then go ahead unsupervised!
Carrot Cake a la Tam:
The baker notes: There’s no link for this picket line recommendation. Follow the recipe above but add a generous measure (or two) of Sourthern Comfort to the batter before baking.
Chocolate loaf:
The baker notes: This was nearly the most popular on the picket and was also the base recipe (without almonds and chips) for the marbled loaf.
Lemon (and gin) drizzle:
The baker notes: This recipe is easy and has never failed. My icing never looks that good and sometimes I sub out the granulated sugar an icing sugar drizzle.
Tea Bread:
The baker notes: I was leaving the picket for a while and needed something that would keep. This fatless teabread is best covered in butter, and once it’s a while old – best toasted!
